Türkiye keeps the same clock all year, so sunset in Istanbul swings from about 17:35 in mid December to 20:40 in mid June, and the sky is dark about half an hour later. An evening tour starts with the light, not at a fixed hour.

In summer the light goes late, so the cistern comes first and the tower last; in winter the whole route moves two hours earlier. The evening bends to what you want: cocktails on a rooftop, a meyhane with music, a longer hour on the water, or no dinner at all.
You meet your guide in Galata or Pera and climb to a terrace while the light is still on the water. The sun goes down behind the domes of the Old Town, and the rooftops of Beyoğlu are where the city watches it.

Across the Galata Bridge, the Hippodrome, the Blue Mosque and Hagia Sophia are floodlit and the day crowds have gone. Mosque interiors keep daytime visitor hours and close for prayers, so this is the hour for the squares, read from outside.

The cistern is the one great interior that stays open late, with a separate evening session from 7:30 pm. The columns and the water are lit for it, and the room is quieter than at noon.

Dinner is in when you want it, and you choose the table. At Galata Meyhanesi the fasıl band plays Tuesday to Saturday from around 8 pm; in Karaköy, Salon Galata serves until near midnight.

From June to the start of October the Istanbul Archaeology Museums open from 7 to 10 pm under the Ministry of Culture and Tourism’s night museum programme. Mosques close to visitors at prayer times, and meyhanes serve until near midnight.
