Sultanahmet has hundreds of kitchens, and the man on the pavement picks most of them for you. Gülhane Şark Sofrası earns its table differently: a garden on Gülhane Park, two minutes from the tram, under the same plane trees that shade the old palace grounds. The food holds up the address, which in this part of the city is rarer than it should be.

A Table Beside Gülhane Park

The restaurant is on Alay Köşkü Caddesi, the road that runs along the park wall below the outer courtyard of Topkapı. Come out of the Gülhane tram stop on the T1 line and it is a two minute walk.

The neon sign and the note-covered wall mark the door. The garden is through the back, under the plane trees.

That puts it within ten minutes of Hagia Sophia and the Blue Mosque, and about the same from Eminönü and the ferries. For a first night in the old city, the geography does half the planning for you.

There are two rooms to choose between. Inside is close and warm, the lighting low. The garden stretches along the park edge under the trees, and it is the better seat from spring to autumn, particularly in the hour the light goes.

What Comes to the Table

The menu is long. These are the parts worth crossing the city for.

  • The meze tray. Hummus, haydari, ezme with as much heat as you ask for. Four of them between two people is a legitimate meal.
  • Testi kebab. Meat and vegetables sealed inside a clay pot, cooked slowly, then carried out and cracked open in front of you. It wants ordering ahead, which is the kind of call a guide makes for you.
  • Hünkar beğendi. Lamb over smoked aubergine purée, an Ottoman palace dish that survives on menus because nothing replaced it.
  • The charcoal grill. Lamb chops and the kebab list, cooked over real coals.
  • Künefe and baklava. Made in house. Order the künefe with the mains, because it is baked to order.
A şark sofrası is an eastern table: mezes first, mains after, tea until you leave.

The menu also has fish, and the vegetarian section is a real one. The kitchen tells guests its meat is halal.

The Music Starts in the Evening

From the evening onwards a musician works through Turkish standards and whatever song a table asks for, on one guitar. He plays to the room rather than at it.

Eat early if you want a quiet dinner. Come at nine if you want the version people remember.

One table starts singing along, a second joins, and by the end of the evening the garden is doing it together.

Nargile After the Plates Go

They serve nargile after dinner, and they take it seriously, which is not true everywhere in the old city. The staff change the coals before they go bitter and keep the equipment clean. The flavour list goes past plain apple, and the staff will steer you.

That is why a table that arrived at eight is still there at midnight.

The Owner Is Usually in the Room

Mr Dağıstan, the owner, works the tables himself, and he means the question when he asks how the food was. Much of the consistency comes down to him.

The dining room walls are covered in handwritten notes left by guests, layered one over another for years. Nobody takes them down, and regulars come back to find their own.

Tea keeps coming after the plates go. Nobody is hurried out of a seat here.

His presence also buys what does not happen at the door. Nobody stands outside catching tourists by the sleeve, and nobody upsells you a set menu you did not ask about. In Sultanahmet, that alone narrows the field a long way.

Getting There & When to Book

It opens late morning and runs until the small hours, seven days a week. Weekend evenings fill, and the garden tables go first, so book if you want one.

Reservations happen by phone or Instagram message, and the call is a Turkish-language one, which is exactly the kind of thing your guide handles. The restaurant takes cards, the wifi works, and families are entirely normal here at any hour the kitchen is open.

The End of an Old City Day

This is a dinner for the end of an old city day. Sultanahmet empties of day visitors around six, the park gates are just there, and the walk back from a late table is downhill and quiet.

We send guests here at the end of walking days and we eat here ourselves. A guide calls the garden table in Turkish the day before and times your arrival for the singing. It is on the short list of old city kitchens still worth the address they occupy.

Where exactly is Gülhane Şark Sofrası?

On Alay Köşkü Caddesi, the road along the wall of Gülhane Park, about two minutes on foot from the Gülhane stop on the T1 tram line and ten minutes from Hagia Sophia.

Do you need to book a table?

For a weekday lunch, no. For a weekend evening or a garden table, yes. Booking is by phone or Instagram message, so allow a little time for a reply.

What should you order at Gülhane Şark Sofrası?

The testi kebab if there are two or more of you: a waiter carries it out sealed in its clay pot and cracks it open at your table. Otherwise hünkar beğendi, which is lamb over smoked aubergine, and a spread of mezes to start. Order the künefe with the mains, not after them, because it is baked to order.

Is there live music every night?

There is a musician most evenings playing Turkish classics and requests on guitar, and the room tends to join in. Come early if you would rather eat quietly, and around nine if you want the singing.

Is the food halal, and are there vegetarian options?

The restaurant states that its meat is halal. There is a full vegetarian section on the menu as well as fish, so a mixed table is straightforward here.

Can you smoke nargile there?

Yes, and it is one of the better nargile services in the old city, with a real flavour list. It is served after dinner in both the garden and the inside room, and the staff swap the coals before they turn bitter.

Is it a tourist restaurant?

It is in the most visited square kilometre of the city, so of course visitors eat there. What separates it from its neighbours is that nobody works the pavement for custom, the owner is on the floor most nights, and the menu is the food of this city rather than a photograph of it.
